Ingredients
- Flour – 1 and 1/3 cups
- Sugar – 3 tablespoons
- Baking powder – 2 and 1/2 teaspoons
- Salt – a pinch
- Buttermilk – 1 and 1/4 cups
- Eggs – 2 large
- Melted butter or oil – 2 tablespoons + additional fat for frying
- Blueberries – 1 cup + for decoration
Preparation
In a large bowl, mix sifted flour with sugar, baking powder, and salt. In another bowl, whisk buttermilk, eggs, and 2 tablespoons of melted butter. Combine with dry ingredients and gently fold in the blueberries.
Heat a frying pan greased with fat, spoon 2 tablespoons of batter for each pancake, and fry over medium heat until golden brown. Place on paper towels or directly on plates. Drizzle with maple syrup and decorate with the remaining blueberries.
